SAUTEING TIPS
Always heat the skillet before you add the oil. Allow the fish to remain in the skillet for two minutes before trying to turn. The purpose of this is for the fish to develop a crust without sticking. You can take a peek with the spatula after about 1 minute. You need to flip the fish with two spatulas- the spatula in your right hand goes under the fish; the one in your left hand helps you flip the fish. Sautéing is easy but it requires some concentration. Have all of your ingredients lined up to the left or right of the stove. Don't answer the phone or the doorbell. Use the highest possible flame.
